Bakery

Sourdough bread, baked in Detroit on Michigan wheat

  • Detroit
  • Michigan-milled flour
  • Same-day pickup

One bakery bakes every loaf we sell. Not three, not whoever is cheapest that month. The dough is a long-fermented sourdough made from Michigan-milled wheat, shaped in the evening and baked overnight, so the loaves reach our counter in the morning still smelling of the oven.

Each round is about 900 g. That is a family's bread for three or four days, or a week for one person if you slice half and freeze it. The crust is dark and blistered on purpose. If you want a pale soft sandwich loaf, this is the wrong bread and we would rather tell you now.

Sourdough is baked the night before. Pick it up the same day or freeze it. We don't hold bread overnight for a later pickup, because a day-old loaf sold as fresh is exactly the thing we tell people we don't do.

Jars of raw wildflower honey and tart cherry and strawberry rhubarb preserves with a honey dipper
Honey 1 lb · preserves 8 ozMichigan · small batch

Jars

Raw Michigan honey and small batch preserves

  • Michigan
  • Raw · strained
  • Shelf stable

The honey is wildflower, which means the bees worked whatever was blooming, and the jar tastes of that summer rather than a single crop. It is raw. It is strained through mesh to take out wax and bits of comb and then it is left alone: no fine filtering, no heating to keep it runny. Raw honey crystallizes. That is not a fault. Stand the jar in warm water and it loosens again.

Preserves come in two flavors and only two: tart cherry and strawberry rhubarb. Small batches, cooked in open pans, set with fruit and sugar. Tart cherry is the one to buy if you have never had Michigan tart cherries on toast. Strawberry rhubarb is the one that runs out between batches, so ask before you plan a cake around it.

Jars keep on a shelf, so these are the items you can add to any order without thinking about the pickup day. A jar of honey and a loaf is a normal order. So is one jar.

A dozen pastured eggs in mixed brown shades from Lapeer County, some loose beside the tray
Pastured eggs · per dozenLapeer Co. · held at 40°F

Cooler

Pastured eggs for Detroit kitchens, by the dozen or half

  • Lapeer County
  • Pastured hens
  • 40°F

The hens are out on pasture in Lapeer County, north of the city. Their eggs come in mixed shades, pale tan to deep brown, some speckled, and the sizes are not graded to a machine. A dozen will not look like a supermarket dozen. The yolks are darker when the grass is growing and paler in deep winter, and we don't pretend otherwise.

We don't ship eggs. They go from the farm cooler to ours to your bag, and our cooler holds them at 40°F the whole time they are with us. That short chain is the reason we sell them, so we won't break it by putting a carton in a courier van.

Six eggs is a real order. So is a dozen for the week plus a second dozen for baking. Supply follows the flock, and in the short days of winter laying drops, which is when asking a day ahead matters most.

04 · Dry shelf

Dry staples, sold by the pound bag

A short shelf, kept short on purpose. Three things that a pantry actually runs through and that keep for months. Each bag carries a tag with its county like everything else on the counter. No photograph needed: they look like beans.

  • Navy beans

Small white dry beans for baked beans, soup and chili. Soak overnight, simmer about an hour. One pound feeds six people as a side.

    Per lb bag
  • Stone-ground cornmeal

Whole-grain meal with the germ left in, so it tastes of corn and goes stale faster than the degermed kind. Keep it in the freezer if the bag will last you more than a couple of months.

    Per lb bag
  • Rolled oats

Old-fashioned rolled oats for porridge, granola and crumble toppings. Not quick oats. Five minutes on the stove.

How a bread and egg order gets to you

The bakery only bakes what is counted. That is why bread wants a day's notice and jars don't.

  1. Send the request by the day before.List what you want: two loaves, a dozen eggs, one jar of tart cherry. Use the form or call (313) 833-9300.
  2. We call or email back to confirm.A person checks what the bakery and the flock can cover and gives you a pickup day. If eggs are short that week, you hear it here, not at the counter.
  3. Your order is set aside with your name on it.Eggs wait in the 40°F cooler. Bread comes in that morning and goes straight into your bag.
  4. Collect at 2934 Russell Street and pay.The total is confirmed at the counter at the week's board price. No card is taken online, because nothing is charged online.

Before you order

The questions people ask at the counter

Can you ship honey or bread to another city?

No. We don't ship perishables at all, and we keep the rule simple by not shipping the jars either. Everything on this page is collected at the counter. If you live outside Detroit and pass through, send the request with the day you will be in town.

Is this cheaper than a supermarket?

Usually not, and we don't claim to be. Pastured eggs and an overnight sourdough cost more to make than their factory versions. What you get for the price is a named county, a named bakery and a quantity sized to your kitchen.

What if I can't come on the agreed day?

Call before the day and we move it. We don't hold bread or eggs past the agreed pickup day without hearing from you, because they go back on sale while they are still good. Jars can wait a little longer; ask.

Something was wrong with it when I opened it at home.

Check at the counter first: open the egg tray, look at the loaf. If an item is spoiled at pickup and you tell us there, we replace it. The detail is in the freshness guarantee.

Who is this not for?

Anyone who needs delivery, a same-hour order or catering volumes. We are a small counter shop selling household amounts. Forty loaves for an event is a conversation with the bakery, not with us.

Order by the day before

One loaf and six eggs is a proper order.

Tell us what you want and which day suits. We confirm by phone or email, set it aside at 2934 Russell Street, and you pay when you collect.
